Kitchen Manager
Position Summary
The Kitchen Manager is responsible for overseeing the daily operation of the Grillito Taqueria kitchen. This position leads and trains the kitchen staff, maintains food quality and safety standards, controls food and labor costs, manages inventory, and ensures that all orders are prepared accurately and efficiently.
The ideal candidate is an experienced restaurant professional who is organized, dependable, hands-on, and able to lead a team in a fast-paced environment. The Kitchen Manager must be willing to work alongside the staff during busy periods and perform any kitchen duty when needed.
Primary Responsibilities
Kitchen Operations
Oversee daily food preparation, cooking, assembly, and kitchen operations.
Ensure tacos, burritos, bowls, tortas, quesadillas, nachos, empanadas, proteins, rice, beans, salsas, and other menu items are prepared according to Grillito Taqueria recipes.
Monitor ticket times and ensure orders are completed quickly, accurately, and consistently.
Maintain proper food portions, presentation, taste, and quality.
Make sure the kitchen and prep line are fully stocked before and throughout each shift.
Coordinate opening, shift-change, and closing kitchen procedures.
Work on the grill, fryer, prep line, or other stations when needed.
Staff Leadership and Training
Supervise, train, coach, and motivate kitchen employees.
Assign daily workstations, prep duties, cleaning responsibilities, and closing tasks.
Train employees on recipes, portion sizes, cooking procedures, food safety, equipment use, and customer service expectations.
Monitor employee attendance, punctuality, performance, and productivity.
Address employee concerns and performance issues professionally.
Help create staff schedules based on business needs and labor goals.
Promote teamwork, respect, accountability, and a positive work environment.
Food Safety and Sanitation
Enforce all food safety, sanitation, and employee hygiene requirements.
Monitor and document food temperatures for cooking, cooling, reheating, refrigeration, and hot holding.
Ensure food is properly labeled, dated, rotated, stored, and protected from contamination.
Follow and enforce FIFO—First In, First Out—inventory procedures.
Maintain required temperature, sanitation, receiving, and cleaning logs.
Ensure employees properly wash their hands and use gloves and utensils as required.
Keep the kitchen, equipment, floors, storage areas, prep stations, and sinks clean and organized.
Prepare the kitchen for health department or regulatory inspections.
Inventory and Food-Cost Control
Complete weekly inventory counts and report shortages or unusual usage.
Monitor food levels and prepare accurate product-ordering lists.
Receive deliveries and verify product quantity, quality, temperature, and condition.
Control portion sizes to reduce waste and maintain food-cost goals.
Monitor overproduction, spoilage, incorrect orders, employee meals, and waste.
Ensure proteins and other high-cost ingredients are properly weighed and portioned.
Report equipment problems, product shortages, and vendor issues promptly.
Quality Control
Taste and inspect prepared food to ensure quality and consistency.
Make sure all menu items follow approved recipes and portion standards.
Confirm every order is complete before it is served or packaged.
Respond quickly to incorrect orders or customer concerns involving food quality.
Maintain Grillito Taqueria’s standards during both slow and high-volume periods.
Equipment and Facility Care
Ensure employees safely operate grills, fryers, ovens, refrigerators, freezers, food-preparation equipment, and other kitchen equipment.
Monitor equipment temperatures and operating conditions
.
Report maintenance and repair needs immediately.
Make sure cooking equipment is turned off, cleaned, and secured at closing.
Follow all fire-prevention and workplace-safety procedures.
Qualifications
At least two years of restaurant kitchen experience preferred.
At least one year of kitchen leadership, shift-lead, or management experience preferred.
Experience with Mexican cuisine is strongly preferred.
Ability to lead employees and maintain standards in a fast-paced environment.
Strong knowledge of food safety, sanitation, food preparation, and kitchen operations.
Ability to follow and enforce recipes, portion controls, and operating procedures.
Strong communication, organization, and problem-solving skills.
Dependable, punctual, professional, and willing to take responsibility.
Comfortable using inventory sheets, temperature logs, checklists, and basic reports.
Bilingual English and Spanish is strongly preferred.
ServSafe Manager Certification preferred or must be obtained within the required period after hiring.
Physical Requirements
The Kitchen Manager must be able to:
Stand and walk for extended periods.
Work around grills, fryers, ovens, steam, and hot surfaces.
Lift and carry up to 50 pounds.
Bend, reach, twist, push, pull, and perform repetitive movements.
Safely use knives, cooking equipment, cleaning supplies, and food-preparation equipment.
Work in refrigerated, heated, and fast-paced kitchen environments.
Schedule Requirements
Must have flexible availability.
Must be available for opening, closing, weekend, and holiday shifts as required.
Must be available during the restaurant’s busiest operating periods.
Additional hours may be required for deliveries, inventory, training, inspections, or special events.

Line Cook
Position Summary
The Line Cook is responsible for preparing high-quality food quickly, safely, and consistently while maintaining Grillito Taqueria's recipes and presentation standards. The ideal candidate is organized, works well under pressure, and enjoys being part of a collaborative kitchen team.
Key Responsibilities
Prepare menu items according to Grillito Taqueria recipes and portion standards.
Cook proteins, rice, beans, vegetables, tacos, burritos, bowls, tortas, quesadillas, empanadas, and other menu items.
Operate kitchen equipment including flat-top grill, fryer, ovens, and food prep equipment safely.
Maintain food quality, consistency, and presentation on every order.
Ensure all food is prepared in accordance with food safety and sanitation regulations.
Stock and restock ingredients throughout each shift.
Assist with daily food preparation and ingredient prep.
Maintain a clean and organized workstation.
Follow FIFO (First In, First Out) inventory procedures.
Monitor food temperatures and properly label and store food.
Communicate effectively with front-of-house staff to ensure accurate and timely orders.
Assist with opening and closing kitchen duties.

Bilingual Cashier / Front Line Team Member (English & Spanish)
Position Summary
The Bilingual Cashier / Front Line Team Member serves as the face of Grillito Taqueria by providing outstanding customer service while accurately processing orders and payments. This position also assists on the front-line prep station by assembling customer orders, maintaining food quality, and ensuring a clean and organized workspace.
The ideal candidate is fluent in both English and Spanish, enjoys working with people, and thrives in a fast-paced environment.
Key Responsibilities
Customer Service
Welcome every guest with a friendly and positive attitude.
Provide exceptional customer service in both English and Spanish.
Answer customer questions about menu items and make recommendations.
Accurately take dine-in, takeout, and phone orders.

Cash Register Operations
Operate the Point-of-Sale (POS) system efficiently.
Process cash, credit card, and mobile payments accurately.
Balance cash drawer at the beginning and end of each shift.

Food Assembly & Prep Line
Assist in assembling tacos, burritos, bowls, tortas, quesadillas, nachos, empanadas, and other menu items according to Grillito Taqueria standards.
Portion ingredients accurately and consistently.
Restock the prep line throughout the shift.
Ensure orders are complete and accurate before serving customers.
Maintain food presentation and quality standards.
Restaurant Operations
Keep the dining area, and front counter clean and organized.
Refill condiments, napkins, utensils, and as needed.
Assist with opening and closing duties.
Follow all food safety and sanitation procedures.
Work as part of a team to ensure efficient restaurant operations.
Physical Requirements
